The Cake
If you want to cool a cake overnight, you can place it in the fridge or freezer. If you place it in the fridge, leave enough space for it to expand. If you place it in the freezer, make sure to wrap it well in foil or plastic so that it doesn’t freeze to the sides.
Ingredients
-1 cup sugar
-1/2 cup butter
-3 eggs
-1 teaspoon vanilla extract
-2 cups all-purpose flour
-1 teaspoon baking powder
-1/4 teaspoon baking soda
-1/2 cup cold water}\r
Instructions:
- Heat oven to 350 Deg F (175 Deg C)
- In a large bowl, cream together the sugar and butter until light and fluffy. Beat in eggs, one at a time, then stir in vanilla extract. Gradually input the flour, baking powder, and baking soda since it becomes well blended. Stir in water just until moistened. Pour batter into prepared pan.
- Bake it for about 45 to 50 minutes or until a toothpick inserted into the center getting cleaned. Cool the cake completely before frosting or serving.
- Cream together the butter, confectioners’ sugar, and vanilla until fluffy. Add a little milk if necessary to make frosting a spreadable consistency.
- Frost the cooled cake using a piping bag with an open star tip.
For the icing:
1 cup butter-1/2 cup vacuumed-packed sweetened flaked coconut or chopped unsweetened coconut (optional)-1 3/4 cups confectioner’s sugar-1 teaspoon vanilla extract-1 tablespoon heavy whipping cream (optional). Icing may make less than you want, so increase icing quantities accordingly. ~Notes~ ~I used Bob’s Red Mill “Old Fashioned” Baking Powder. I also like the results of using cake flour over all-purpose flour in this recipe. ~The author states that sweetened flaked coconut can be found at most supermarkets and Asian groceries. The author has also stated that sweetened flaked coconut can be substituted for unsweetened shredded or flaked coconut if desired. You can substitute the food processor method of shredding the coconut for the method of shredding with a cheese grater mentioned above, but I don’t recommend it as the product will not resemble the fluffy texture written about by this cookbook author.
